On my personal car I had to convert from a one-wire O2 to a 4-wire, so I had to make a new harness entirely anyway. On the others I mentioned, the chassis side of the harness was extended (most O2 sensor wires are stainless, which you're not going to solder easily at all). Some cut and spliced to extend the chassis side, others just replaced the existing wires in the harness entirely. Really depends on the car and the person.
